How To Make Crab Cakes | Perfect Crab Cakes (Maryland Crab Cakes)

If you like seafood, especially Crab meat, you will absolutely love making the perfect crab cakes! Here's one of my go to recipes for a light snack, or great appetizers. You, and your guests will enjoy this especially if you love sea fare. An All-American classic that originated in Baltimore, during the 1930's, Crab Cakes have been a staple in American Cuisine, ever since!
Today, I'll teach you just how easy it is to make Crab Cakes, with this somple recipe! Let's get started! For this recipe, you'll need:

Lump Crab Meat(you can also use fresh)
             Crackers
             Breadcrumbs
             Old Bay Seasoning
             Tarragon
             Lemon Juice
            Capers(optional)
            Parsley
            Mayonaise
            Dijon Mustard
            Shallots (finely diced)
            Celery (diced)
            Soy Sauce
            Worchestorshire Sauce
            Egg Yolks
            Dried Thyme

First, you'll want to prep your vegetables, like the shallots, and celery. Set aside, in a separate bowl. Next, add the Old Bay Seasoning, Mayonnaise, Soy Sauce, along with the rest of the wet ingredients. Give it a good mix, and add the crackers, and breadcrumbs. Next, Preheat your oven to 400F. I broiled mine at 425F because my oven is one of those quirky ones. You'll need to adjust yours accordingly.

After that, add the rest of the ingredients, along with the egg yolks, and mix to incorporate evenly. Now, it's time for you to form the cakes! For this you'll need a baking sheet pan, along with a 2" ring mould for shaping the crab cakes. Simply, spoon some crab mixture into the ring mould space as you attempt to build height to your desired amount.
Once you've finished packing and, shaping your crab cakes, make sure to space them out 1 - 2 inches apart in the baking pan.  Once you've accomplished this task, it's time to bake the crab cakes, so pop them in the oven, for 10-15 minutes or until slightly browned. Remove, set aside to cool on a cork mat, for at least 10 minutes before serving!

While the crab cakes are in the oven, take this time to make the sauce! For this you'll need:

    2-3 Tbsp Mayonnaise
    1 Tbsp Ketchup
    1-2 Tsp Lemon Juice(freshly squeezed)
    1 Tsp rinsed Capers
2 Tbsp Flat Leaf Parsley(freshly chopped)
    1/8 Tsp Paprika
1 Tsp Low Sodium Soy Sauce
    1/4 Tsp Lemon Zest

Mix ingredients together to combine and, refrigerate. The dipping sauce must be cold. Cut up some lemon slices, or wedges, for your garnish, and enjoy!

How To Make Cig Kofte (Armenian Steak Tartare) Chikufta #cigkofte

If you've ever been to a Middle-Eastern, or Mediterranean Restaurant, you might have seen this dish as part of a wide variety of mezze, or appetizer platters on the table. Cig Kofte or, Chikufta, is a raw meatball dish in Armenian, and Middle-Eastern cuisine, very similar to Kibbeh Nayeh, and to a lesser extent to Steak Tartare. It is traditionally made with either beef or lamb, a vegetarian variety may also be served. Ciğ Köfte may be served as an appetizer, or mezze. In the beef variant, ground beef is used. Tendons and fat are removed before grinding the beef. Relatively expensive high-quality beef has to be used so that the meat can be safely served raw. London Broil, or Top Round, are are recommended choices for the ground beef. Since lamb is considered a "clean meat", it is often used for Ciğ Köfte instead of beef. Armenians  use Ciğ Köfte as a mezze, served almost cold. The raw meat ball, or Kofte, is not kept overnight and is reserved for special occ
