Falafel is very special to me, since I practically grew up on it. My parents would often stop off at our favorite Falafel Shop, on their way home from work, and bring some home for me as well. I just love the crunchy exterior, and fluffy, soft interior. It's practically, heavenly! If you enjoy eating Falafel once in a while, then you'll love this! Here's one of two ways you can make the best tasting Falafel, right in the comfort of your own kitchen.
Here's what you'll need:
1 can Garbanzo Beans (drained, rinsed, peeled, and patted dry)
3/4 can Fava Beans (drained rinsed, and patted dry)
1/2 cup #1 fine bulgur wheat
2 Tbsp Fresh Parsley
2 Tbsp Fresh Cilantro
5-6 Cloves Garlic
1/2 an Onion
1 1/2 Tsp Salt
3/4 Tsp Ground Cumin
1 Tsp Ground Coriander
1 Tsp Baking Powder
1/2 All Purpose Flour
1/2 Lemon (juiced)
Combine the mixture of Garbanzo and, Fava Beans into the food processor, along with all the spices, flour, herbs, baking powder, bulgur, and lemon juice. Pulse a few times until the mixture has reached a coarse ground. The consistency should look like cornmeal roughly milled.
Next, you'll give it a good mix using your hands, then, transfer to a mixing bowl, cover with plastic, and set in the refrigerator overnight. This will help the baking powder do its thing, and the mixture will soak up the excess moisture.
The next day, you're ready to fry! Yes! Fry....not fly. Sorry! Okay, so heat your fryer on high to 325F then shape the croquettes, and drop them in, making sure not to fry more than four balls at a time. You don't want the temperature to drop. Trust me. Make sure to fry each ball for no more than 4-5 minutes, or until evenly browned.
After that, drain onto a cooling rack, to remove excess oil, and set aside. If you want to keep these warm for the next thirty minutes as, you assemble the sandwiches, you must preheat the oven on 250F and, place the Falafel balls, into an over safe dish then let it keep warm in the oven.
Please make sure you watch the Tahini Sauce video for instructions on how to make it, because you'll need that to garnish on top.
Next, you'll take some pita bread, gently tear it open, keeping the round shape, and fit two to four Falafel balls inside, then top with Tahini Sauce, along with some shredded lettuce, sliced tomatoes, and Pickled Turnips. If you can't find pickled Turnips, it's okay, you can substitute regular pickles of your choice.
