Best Tasting Club Sandwich - The Califonia Chicken Club


  Are you tired of the same ol' boring Chicken dishes? Here's a refreshing take on the classic Club Sandwich! For this recipe, I used boneless, skinless chicken breast. Just minutes later, I had what was the best chicken club sandwich ever assembled! This goes well with a side of steak fries. The combination of soft, yet crunchy French bread, along with the freshness of tomato, and savory bacon, with avocado, and chicken, simply can't be beat! This is the best California Chicken Club Sandwich ever! Here's what you'll need:

                                                  1 Boneless Skinless Chicken Breast
                                                  (pounded and cut in half)
                                                  5 Thick Cut Bacon Strips
                                                  4 sliced Tomatoes
                                                  1/2 an Avocado
                                                  Shredded Lettuce
                                                  Mayonaisse
                                                  French Roll
                                                  French Fries

Begin by seasoning the pounded chicken breast liberally on both sides, then let sit minimum of 4 hours in the fridge. Next, you'll need to bake some bacon strips. I used a 9x13 baking dish lined with aluminum foil. Place the bacon strips next to one another lengthwise in the dish, preheat the oven to 400F and bake for 15 minutes, then turn the bacon stripes over on the other side and let bake for another 15 minutes. Reduce heat to 350F. Remove from baking dish, and set on paper towel lined plate. Using another paper towel, blot out excess grease. This baking method eliminates between 30% - 40% of unwanted fat. It is also, a healthier way to cook bacon without frying it. Note, for the seasoning, you may use any type of seasoning for chicken. I used my own blend. By choosing your favorite seasoning, it allows you to put your own spin on things.

While the bacon cooks, you'll want to prep. your tomato, and lettuce. Shred the lettuce using a mandolin or, a knife. You can also use a food processor for this method, but in my opinion, you're better off using a knife. Doing things by hand is the best method. Next, slice the tomatoes thinly, and set aside. I used about 4 slices of tomato. You may choose to add more, or less. It all depends on your palette.

After that, you'll want to grill the chicken. It takes a total of ten minutes to do, depending on how moist, or dry you prefer chicken breast. I like mine, somewhere in the middle, and cook it for 9 minutes, on a cast iron serrated grill, mainly because of its heat retention. You can cook it on any surface you'd like. Oven baked also, works well. You can grill it on the barbecue as well. No worries, you're the chef! Make sure, you slice the avocado during this time, and set aside. You'll want to time everything around the bacon and chicken breast both being done simultaneously.

Next, I cut the bread in half, lengthwise, spread some mayo on it, then laid the lettuce down on the bottom, then tomato. Top that with the baked bacon, then place avocado slices, and  the chicken down, then close the sandwich. Mark your cutting point with your finger outlining it in your head, and slice away! After that place it on a plate. You might want to use toothpicks, or bamboo skewers for this part, depending on the height of your sandwich. For the side dish to this sandwich, I chose to pair it with steak fries, because that's what I had on hand. I prefer Curly Fries for this. It will do the sandwich more justice. You may cook your fries, any way you like, to your desired taste. Another option, is to skip the fries entirely, and go with your favorite chips. This recipe makes two sandwiches, so you can enjoy with your loved ones, family, and, or friends.
