Here's an easy Pesto Sauce Recipe for all you Italian food lovers! Pesto Sauce is so versatile, you can spread it on your favorite type of bread, and serve it as an appetizer, (with, or without Parmesan cheese)or make it ahead of time, and add it as a finishing touch to any pasta dish! It also pairs well with chicken. It serves as a great vegan option too(just omit the Parmesan cheese). Pesto Sauce is one of my favorite all-time recipes, and I'm going to share it with you! Now, let's get started! For this recipe, you'll need:
1 Bunch Fresh Basil(I used a Purple Basil variety)
1/2 of 1 Bunch Italian Flat Leaf Parsley
1/2 Cup Pine Nuts (lightly toasted)
1/4 Parmesan Cheese (freshly grated)
1/8 Tsp Chili Flakes
1 pinch Coarse Sea Salt
1/4 Cup Extra Virgin Olive Oil
1-2 Cloves Garlic

This recipe goes a lot faster, if you prepare it using a food processor. First, you'll place the basil in, stems removed. Then, you'll add in the parsley(stems also removed). Next, you'll need to add in the garlic clove(s), and toast the pine nuts. Although, this step is optional, it imparts the most flavor. Here's a pro tip: When nuts are toasted, it begins releasing their natural oils.
After you're done toasting the pine nuts, add in the chili flakes, and sea salt. Next, you'll need to dump in the freshly grated Parmesan cheese, and close the lid to your food processor. Get ready! Here comes the fun part! Yup! You guessed it! It's time to make an emulsion. Pulse the ingredients a few times, before adding in the olive oil. Next, turn the food processor on, while you keep a constant, steady stream of oil coming through. once you see the mixture coming together, go ahead and, turn the food processor off. Now, you'll need to go in using your trusty spatula to scrape the sides of the basin, making sure to get every bit evenly incorporated.
Finally, it's time for a few quick pulses, and viola! You've done it! You've made Pesto Sauce! Next, you'll want to transfer the contents from the food processor into a storage container, and refrigerate for at least 2-4 hours, or overnight. This(like with any sauce or, marinade)will give your mixture the time it needs to fully incorporate and, impart a better flavor profile.
You'll notice, in the video recipe, I omitted the garlic, because I was already going to saute the garlic in a bit of olive oil during cooking. You can also omit the cheese, for a vegan option.
