Okay, so you've been one of my subscribers for months, now, and you feel as though, I haven't really given you anything you can call extraordinary? Well, here's something I've had up my sleeve since the mid 90's! It's a dish that's close to my gut, as well as my heart! Yup, you guessed it! It's Garlic Shrimp with Parmesan Rice! No, this isn't your classic creamy Parmesan rice recipe! It's a drier version, that doesn't eat like Risotto, or anything close to that!
Check it out! For this recipe, you'll need:
Large Shrimp(Peeled & devained)
1 Tbsp Italian Flat Leaf Parsley (chopped)
1 1/2 Cup Uncle Ben's Rice
1/2 Tsp Spanish Saffron
4 Tbsp Extra Virgin Olive Oil
1 Tsp Salt
2 Tbsp Freshly grated Parmesan Cheese
1/4 Tsp Ground Turmeric
2 Cloves Garlic (minced)
2 Cups Chicken Low Sodium Chicken Broth
1/4 Tsp Freshly squeezed Lemon Juice
In a medium sized sauce pot, add in the rice which you've already rinsed four to five times, until the water has run clear. Next, add in the olive oil, and turn the heat to high, while you continuously stir for one minute precisely. Next, add in the salt, turmeric, and stir again until evenly incorporated, and the rice kernels are not clumped. This is the secret to having the fluffiest rice ever. It works every time! Next, add the garlic, and saffron,. Do not add the shrimp yet. You'll need to par boil the rice first, then add the shrimp halfway during the cooking process. You may however, choose to marinate the shrimp overnight with some dry rub. I used my own blend, but may I suggest Old Bay Seasoning for this? It works wonders!
Next, add the chicken broth, and butter. The only thing that doesn't have to be exact with this recipe is when you add the butter. You may choose to add it before or after adding the chicken broth. I have found that, by adding it in before hand, gives the rice extra lubrication, and prevents clumping even better. Once you've added the chicken broth, give it one last stir, cover the pot, set the stove on high heat, and let it come to a boil. Once the rice has begun boiling, simply turn the heat to low, and place a sheet of paper towel over the pot but under the lid, and set your timer for 7 minutes exactly. Once seven minutes has passed, uncover the pot, and place the shrimp in, add the lemon juice, freshly squeezed. Do not use lemon juice from concentrate, it will just not taste the same. Then, gently give it a stir, and close the lid, not forgetting to place the paper towel over the pot but, under the lid. Now, set the timer for 10 minutes! Let it continue steaming on low heat. Once ten minutes has passed, go ahead and fluff the rice, add the chopped parsley, and remove from heat. Finally, let it rest for an additional 10 minutes. Once the final ten minutes has passed, add in the freshly grated Parmesan cheese, mix one last time before serving! Viola! Your Garlic Shrimp Rice Pilaf with Parmesan Rice, is finally done!
This dish is sure to please family, and friends alike! It'll be a total hit at any get together! The colors alone, will wow your guests. You've got the pink shade from the shrimp, the bright yellow color from the rice, and green from the parsley, man, oh man! It'll look like a work of art! Food art to be exact!
As far as the flavor profile is concerned, you'll taste the warm savoriness of garlic, with a hint of tangy lemon, and the rice will taste like pasta, cooked al dente!
